Rhubarb - chopped
Granulated sugar

Place prepared rhubarb in a pan.
For every Kg add 100mls water
Bring slowly to the boil.
Cook gently until the fruit is really pulpy
Tip fruit into a scalded jelly bag and leave to drip overnight
Measure the resulting juice - for every litre of juice add 700g sugar (or to taste)
Heat gently to dissolve sugar then pour into clean sterilised bottles leaving a 1cm gap at the top.
Seal when hot

This cordial will keep for several months if kept in a cool place.

and you can save the pulp and make a rhubarb meringue pie

Looks nice but I imagine it being quite "sharp" / bitter. I have some rhubarb growing though, I may try this.

I recently made rhubarb granita (I think it was a James Martin recipe on the BBC site). Actually tastes quite creamy (I left out the orange). Very yummy stuff.
