I made some air dried ham 9 months ago. It looks fine and doesn't smell but I realise it's getting a little old and am unsure whether we should eat it or not.

Or me! I've not done hams for ages, but have had ones that have been many months old in the past.

We have a ham outside that's over two years old and a bit on the dry side but it's still OK.

Sounds like I'll have to bring it to the June skill share. If it's not gone before then. I started a dry cure on three large pieces of bacon last night

Is there some thread or another about air drying ham, having never done it wondered what was involved... cheers
