Hi. What better for Halloween than this topical chutney, sorry it is 2 days late.
Simon grew a mammoth pumpkin for the children which yielded more than 7kg of flesh. We've made chutney and soup so far and there are still three more pumpkins waiting to be eaten in the cellar. (Good job as the 1st pumpkin lantern caved in due to inclement weather )

Anyway on with the recipe:-

1.25kg (2 1/2lb) prepared pumpkin
500g (1lb) sliced red tomotoes (I used half red, half green ones)
250g (8oz) sliced onions
50g (2oz) sultanas
750g (1 1/2lb) soft brown sugar OR 350g (12oz) each of soft brown/caster sugar
2 garlic cloves
2 teaspoons each of ground ginger, black pepper & ground allspice
2 1/2 tablespoons salt
1 pint vinegar

Combine all the ingredients in a large pan; bring to the boil then simmer until consistency of jam.

Tips: I think a few added chopped chillies wouldn't go amiss next time I make this plus this is a more watery chutney than others so don't boil away for hours expecting it to thicken right up.
