6 large shots good quality dry gin. I used Bombay Eastern
2 large shots dry Martini
1/4 cucumber
2 tablespoons caster sugar
A few twists freshly ground black pepper to taste
6 mint leaves
2 tablespoons lime juice

Whack it all in a blender and turn into a pulp. Freeze in a shallow dish, whisking with a fork every hour or so for five hours.


how cold does that need to go mushy?

did you use dry ice ?liquid n2? Laughing Laughing

i have had bother freezing ice creams with only about a 5%vol alcohol level

Sounds as though it'd be quite nice served in a glass ! Very Happy

Just -20 domestic freezer. The cucumber provides the dilution. It's only just frozen, mind, so I served it up, in the freezer, into tiny glass, insulated bowls, and left then in there until required, and then straight to the table. I don't think it would have lasted very long at all.
