Funnily enough we've just positively identified our first patch of hemlock yesterday and the other weekend went on a walk with an expert to help id many of the other umbellifers, such as cow parsley, last weekend. What I find a bit tricky/confusing with cow parsley is the fact the stems are so variable, plain green stems on one plant and quite purple on another - luckily I didn't really like the taste of the cow parsley.
