Easy "boiled" fruit cake

1/4 pint water
finely grated rind 1 lemon
4oz butter
4oz soft brown sugar
12 oz mixed fruit ( I use just sultanas, but any mix you like will work)

8oz SR flour
1 egg

put the first 5 ingredients in a pan and bring to boil, simmer for 15 mins and then allow to cool (overnight if you like)

Stir in a lighlty beaten egg and the flour. Put in a lined 2lb loaf tin ( or your favourite round one that looks about the right size). Bake at ~150C for 90 mins. The cake is supposed to be ready when a skewer inserted in the middle comes out clean - I prefer this one a little undercooked.

Those with restraint can eat the cake simply sliced - I put butter and damson jam on it! - I have seen it eaten for breakfast sliced with a dollop of marmalade Very Happy

Just calculated this to be 367 cals and 11g fat per 1/8th cake - maybe 2 slices for brekky wasn't such a good idea Embarassed

Thanks - that sounds good.

It does indeed - and low fat too Wink

I'll give it a go.

yum, I love cake, might make some and add some lovely cherries Laughing

thanks Ros Wink
