Easy fruit cake loafso easy and sooo tasty!
2 cups of caster sugar
2 cups of mixed fruit
2 0z unsalted butter
2 cups of water
put all these into a saucepan and heat untill the butter is melted and the sugar is dissolved, and remove from heat.
marg and flour a large bread tin (or use greaseproof paper). turn oven on to 180/350 gas mark 4
To the mixture add;
3 cups of SR flour
2 teaspoons of baking powder
1 teaspoons of ground ginger
2 teaspoons of ground cinnamon
and empty in 2 chi tea bags of tea(not the bags)
mix all the ingredients well and pour into tin, bake for 45 mins
you can vary the ingredients instead of chi tea...use 2 teaspoons of mixed spice, or use chopped fresh fruit.....its a very adaptable recipe!
