Eating garden snails

How to make ordinary garden snails (Helix aspersa ) safe to eat eg. making sure they don't have toxins in their gut.

How to cook them so they don't get too tough.

How to disguise their appearance, I don't fancy them looking too much like the real thing.

I'm sure there was a thread somewhere about preparing snails for eating.

This follows up a short piece on the One Show on 31st March 09, and in Wales on Sunday.

Welcome Oriole, so that was you on the One Show. I don't tend to watch it that often but saw the piece about snails and was very interested in your recipes.

I'll have another go at them this year and try some of your recipes to see if I can find something I enjoy. I think I've under cooked them in the past so the cooking for an hour in a good stock sounds like just what I need to do.
