Hot Ginger Wine

Had to dig out this recipe for another forum so thought I'd post it here too, it does need time to mature, but it was well worth it last time I made any. Nice one for both making wen the weather is grotty (makes the house smell fab when you boil the spices) and for drinking a year or two down teh line in similarly grotty weather.

Hot Ginger Wine:
For 1 gallon, all the usual homebrew stuff required:

2oz fresh root ginger
1/2 tsp good hot cayenne pepper or 1 good chilli
2 oranges
2 lemons
3lb sugar
1lb raisins
1tsp yeast nurtrient
water
high alc wine yeast

chop ginger, chop raisins (food processor helps), grate zest
dissolve sugar in bucket and add raisins
boil the ginger, chili and zests for 20 minutes, strain and add to bucket
make up to half a gallon, ferment for 4 days, strain, top up to a gallon and ferment out.

This one needs to stand for several months plus to age, but is fantastic warmed up, mine always seemed to have a fairly high alc content but I havent made it recently so can't recall what the hydrometer said.

This could be worth a try. I would be tempted to leave out the chilli and increase the ginger for my first batch. Any idea how long it takes before it's ready? (Opps, yes you mention a few months).

It is one to make this year for next year, but its worth it
