Nettle pudding

Just unwrapped a nettle and barley boiled pudding I made yesterday when doing an early food demo, its looking rather good.

Very easy to do, chop up lots of nettles, lay on a cloth, layer with chopped leeks (or anything else tasty) and soaked barley, then tie up in a pudding cloth and boil in stock for a couple of hours. Unwrapped the next morning, I'm going to slice this and fry the slices in bacon fat for lunch.

Ooh: that loks yummy. Infintely variable too, depending on what you have to hand, I should think.

Whats even better is that the stock looks like a fab soup base, I was stuck for time last night so I just boiled them in a veg stock cube and assorted herbs, but of course all the tasty bits from the leeks and nettles and barley are now in that and its looking like a really good base to do something more exciting with. In an ideal world I'd cook these in with a ham joint or similar, but I'd be tempted to do this again the same way to provide a good stock for a basic veg soup

Yes...and it's not quiche, nor does it have any eggs in it (does it Sally?) because I keep forgetting there are only three of us here and I've been eating quiche or scrambled eggs ALL weekend Laughing

course, its a loose variation on one that as best I can tell goes back centuries. If I'd had it I'd have added wild garlic and some jack-by-the-hedge as well, maybe a few cuckoo flowers for pepperyness when they are around, you should be able to do this with pretty much any foraged green to good effect, and it lends itself to campcooking well, you just need a square of cloth to tie it all up in.
