nigella lawson - fishcake

I have had Nigellas double haddock fishcake recipe recommended to me - I though I had got the Feast book which it comes from but havn't - does anyone know what is in the recipe?

Nigellas Feast book is my absolute fav cookery book and believe me I've got a few!
The recipe is
1.5kg floury tattties
1kg skinless haddock
750g smoked haddock
500ml milk
5 tblspns finely chopped parsley
2 hard boiled eggs
4 teaspns english mustard
zest of 2 lemons
1 tblspn lemon juice
200g ritz crackers

Peel & chop tatties, boil until tender, mash.
Put the fish in a frying pan, smoked underneath the plain, with the milk and the stalks from the parsley, salt & pepper.
Bring to the boil and simmer for 5 mins.
Take the fish out of the pan and flake it into a bowl with the chopped parsley. Finely chop the eggs and add them with the mustard, lemon zest and juice.
Add in the mashed tatties and mix.
Crush the ritz crakers and line a baking tray with them. Shape the mix into fishcakes and press them into the crushed crackers, turn them over to get a coating.
200 c on a baking sheet for 20 mins.

Highly recommended, they are delicious!

That's my only problem with Nigella, she only caters for parties of 8 or more! And I know you can downscale but it doesn't always work.

but if you eat what you need at the time and freeze the rest that's a pretty quick tea another night (or 6)

Thanks for the recipe - sounds great and I like the fact that they are not fried

The large quantities don't worry me I nearly always bulk cook and put another meal or two in the freezer Very Happy
