Stuffing..

I am after a really good recipe for stuffing, For a hog roast.

Nothing to fancy or expensive, that can be made the day before, and don't taste like the slop I made last year Embarassed

how about

1 (2 ounce) packet onion soup mix
1 cup water
1 teaspoon seasoning
1/2 cup butter
1/2 cup celery, diced
1/2 cup onions, diced (optional)
8 cups bread, cubes

Saute celery and onion (if using) in butter.
Bring soup mix and water to a boil. Simmer 5 minutes. Stir in seasoning, butter, celery and onion.
Add this mixture to the bread cubes; toss together.
Let stand in a warm place, covered.
Stir occasionally.
Fee

My usual stuffing is simply sausagemeat, breadcrumbs, onions, plus whatever tasty herbs you have to hand.

I know it sounds a bit boring, and is probably most people's base stuffing, but it's delicious and won't take away from your yummy hog roast Smile

You roasting a whole hog? that's a lot of stuffing.

If it's in the cavity then I reckon it would turn out fairly 'moist'. Cook seperate?

You can't beat sage and onion stuffing with pork if you ask me Very Happy

I agree. Stuffing in this house is belly pork, mixed with onion, apple, LOTS of sage, parsely, thyme, rosemary, LOTS of pepper, plenty of salt and breadcrumbs. Mince the pork, blitz everything else in the processor (seperately) and mix them together in a washing up bowl. Fry a bit up and taste it adjust the seasonings or amount of breadcrumbs, and keep adding whatever you think it need until it tastes right. In fact, it's the same as sausage, but with more breadcrumbs!

Ooooh, I've always wanted to do a hog roast. Pork, stuffing, good rolls, mustard, redcurrant jelly, mayo and apple sauce. You can keep your fancy cooking!

Well last year I got 5kg bag of Sage & Onion from the chef at work, Added hot water to it Embarassed but did nowt else Embarassed

No one said anything on the day Rolling Eyes But I have been receiving comments this year as to what different stuffing we are going to have Rolling Eyes Embarassed

Chestnut and bacon stuffing is good with pork.

I would do 3 different types - one plain sage and onion, one pork sausagemeat and apricots with lots of thyme and some garlic and a n other, perhaps as Sean suggests one with chestnuts or one with apple in it Very Happy

Great so that's the stuffing sorted, and the apple sauce.

Just need to find someone to turn the Spit every 15 min's for 10 Hours Laughing Laughing

Seriously though, if you want me to do one lot of stuffing Ruby, I would be happy to.

Just can't wait for this party (to be over). Laughing Snowball - might take you up on that - logistics - I will be staying at my sister's beforehand. In theory she is moving house that weekend... Shocked I will pm you sometime before then.
