Wild Garlic Soup


  • 300g Wild Garlic

  • 50g Arborio rice

  • 50g butter

  • 1 litre chicken stock

  • 1 stick celery

  • 1 onion

  • 1 clove garlic


  1. Sauté onion and celery in butter. Add rice and stir. Add stock and cook out for 15mins.

  2. Now rice is soft fold in chopped up wild garlic until colour change.

  3. Blitz soup in liquidiser. Season with salt and pepper.

  4. Season with white pepper and sea salt.
