I made yogurt with whole mile as described here , then strained it overnight - I lined a jelly bag with some cheesecloth. I kept the whey to use when making scones. I seasoned with salt and added chopped three cornered leaks. Like cream cheese. We are just eating it on crackers, next to see how it does in cooking and whether an unsalted version would make a cheese cake type thing...

Looks delicious. I can imagine some chopped fresh dill in there.
