Had pheasant curry last night with the leftovers from a roast brace, I've got a large Mallard to pluck tonight, (have to see how old he is before I think of a recipe),
Which got me thinking that it's been one of the best seasons ever for wild game, Had loads of woodcock, it's almost become a staple rather than a treat, as have ducks, pheasant and pigeon.
The only thing which seems to be thin on the ground is rabbit. |

We've had plenty of rabbits at the FM but nothing as exotic as woodcock. All duck around here is farmed. Might try a game pie later this month. |

Pheasant has been exceptional I agree, Rabbit well how many do you want & pigeon, still have 6 in the freezer.
But you cant beat the meat that you can say is fresh and never been handled by anyone but you.
Will probably have rabbit & pigeon stew when the guests are here at the weekend
I personally have not seen a woodcock for many a year. |

I'd love to try a woodcock but never seen one. I've stopped buying pheasants and partridge this year as I've no idea how they've been reared. Seen a good number of deer and rabbits though, trying to buy a whole deer and get some rabbits this weekend.  |

We get woodcock over here when the weather turns cold on the mainland , but they are the prized posession of the estate , whom are not to be crossed under any circumstances, , but the new scottish 'right to roam'has opened up a whole new game for us wee peasants, giving us right to wildfowling on the foreshaw right under their noses and theres nowt they can do - its all perfectly legal - so its bunnies courtesy of the lurchers ( 50 wednesday evening) - all witnessed you can count on that - a Procurator Fiscals fiancee at that !!!! and duck and goose , courtesy of the new right to roam law - thanks , and by the way we DO run lurcher and wildfowling holidays and breaks . |

It's getting even better, the cold air from Siberia must have sent another wave of birds over.
I have four Woodcock now hanging in the shed, what a greedy guts week this is going to be.
Normally we eat our game fresh, but last night I had to de-breast four pheasants for the freezer, as I just 'aint got the room in my belly! |

Had two woodcock last night, delicious.
Just in case you use it, the HFW recipe woefully underestimates cooking times, mine were in for 30 mins and could were still medium. He recommends 8mins. for rare/medium and 20 for well done. |

I've noticed that too. Maybe he likes his poultry rare? |
