apple /cider sourdough,has anyone else tried it ?

last month i used windfall apple juice direct to strong flour which took a lot of kneading but was very nice after 4 days of prove/knead each day

this time im using fairly live cider which seems to work up into dough faster

no salt or non wild yeasts and only enough oil on the board to stop kneading getting messy

i will report on the two in a few days but any suggestions for the next one?

ps the wild yeast collection made good cider but no where near enough as it was a half gallon experiment

risen and re kneaded .proved and cooked

this batch(cider)was faster and gassier than than the juice version but worked fine as a tin loaf and as a raisin and cinnamon curl

im feeding a bit of the cider batch as a herman to see how that works out as a raising agent and for inoculating a slow ferment

My wife used some fermenting cider to start the sour dough and its been very successful!!
