pickled beetroot/onion recipe?

Ive had a look in recipes and cant find anything. I have little beets needing to be done now and will have shallots really soon. Im looking for a simple method to preserve these and pickling seems to be the way.I dont like fancy stuff, but just venegar seems a bit 'wrong', so anyone want to share a recipe? and how to?

Pickled onions. Prety sure you'd do shallots the same way. No idea about beetroot, sorry.

Thanks I did look in Tescos for pickling spices, but they didnt have a jar/pack. Going to the healthfood store...

Our greengrocer sells them. If you don't have any joy let me know & I'll shove a couple of packs in the post.
