Hi

I have tried twice now to make cinder toffee and have failed ... twice!

I bought some from our local farm shop today and was inspired to try again.

So, has anyone actually succeeded in making the stuff properly? If so could they post the recipe and foolproof instructions please.

(I have already trawled the web and found several recipes, but no one claiming to have actually made it successfully from them).

Thanks

frewen

Do you have a sugar thermometer? Sorry if this is a given - but as you need to get the mix to 138 degrees c it may help.

I make it at school when I'm doing rocks (it's supposed to represent pummice).

I put a bag of sugar in a pan with a splosh of water and heat over a bunsen (a medium/hot heat) until it's all melted. Then take it off the heat put in some Sodium bicarb and stir like crazy until it all goes pale and puffs up. Pour into aluminium trays and leave to cool. Sometimes it works well. I'm getting it right more consistently these days

You should try it coated in chocolate inside a cheesecake. Yum!

The recipe I used to use came from a 1970s vintage Green Eggs and Ham cook book, have spent the last hr looking for it 'cos my kids would love it too but can't find the flippin thing. Think it was more complicated than Jamanda's science experiment recipe though......
