Yack I dont like pancakes, luckerly for me the husband is working away so I dont have to suffer

The recipe I use is 4oz flour/2 eggs/10 fluid ounces of milk. Works well. Include a little pinch of salt in the mix, and use small amounts of melted butter in the pan.

We had a two-course pancake feast. Savoury pancakes (roll pancakes up with a filling of cooked chicken, cooked spinach, grated cheese and halved cherry tomatoes, pop in a moderate overn for about 10 minutes. Yum. Then sweet pancakes with lemon and sugar or jam.

All pancaked out now....

In South Africa any rainy day is Pancake Day.


Living where I do I have no intention of dying of pancace poisening

My pancakes have blueberries and sour cream as a standard filling. Pancakes are eaten a couple of times a month, always sweet and always delightful

I thought about tossing but that's as far as it got - the cast iron frying pan makes it a bit of a weight lifting exercise... they didn't stick though

I've just had my pancakes, a day late (late as usual). Yum. But I'm pancaked out - will the rest of the batter keep till tomorrow lunchtime ?

Yep. Batter keeps fine in the fridge for a couple of days in my experience.

I had mine yesterday, with lemon and crunchy sugar. Tomorrow, we'll have the leftover batter, with spinach, cheese and pancetta filling, and tomato sauce and mozzarella. Himself thinks he doesn't like pancakes, but loves the savoury 'cannelloni' he thinks he's having tomorrow.
